Karen Ekins Yummy Hot Sauce

One of my most favorite memories of my mom was when she canned her Hot Sauce (salsa) in the summer time. It made out house smell soooo good. I have been in search of her recipe for ever… AND I FOUND IT! I found it at my dad’s house. I think the safest place to put this recipe is on my blog so I don’t lose it again. I have never canned before but this year I am going to try it out. Here it is…

Karen Ekins Yummy Hot Sauce

¼ bushel tomatoes (30-35)
2 jalapeños without seeds plus 4T ground with seeds
2 yellow peppers with seeds (grind and cut off tops)
1 long green pepper with seeds (grind and cut off tops)
2 Tablespoons salt
3 large onions (2 Ground & 1 Chopped)
½ Cup vinegar
1 teaspoon sugar
1 garlic button

She didn’t give any directions on how long to cook it, but I’m sure its not too different than other salsa recipes.

Summer Fun

It feels like summer is finally starting to slow down. We have had so much fun. Travis and Amy came out from Georgia for three weeks. We had lots of picnics, went up to Payson lakes and went canoeing. We saw an amazing rainbow while we were up there. We also went swimming and did a lot of just hanging out. We had a lot of fun and kids are missing everyone already. Thanks for the fun summer everyone!

Maylee and the Bead

Last night we went over to Richard and Lisa’s house for a barbeque. Right before we left, Lisa discovered that her almost 2 year old daughter Maylee had a bead stuck up her nose. It was quite amusing to watch the whole family team up to get the bead out. Cousin Savannah was thinking of every bribe in the book, Darron and Richard tried using the vacuum, I was on the internet Googeling “How to get bead out of childs nose”. And about 6 others cheering Maylee on, and holding her down while we attached the vacuum to her nose. Nothing worked. We all left and hoping that something would happen. This morning we found out that Maylee was waking up all night complaining about her nose hurting. Finally at 5 a.m. Lisa woke Richard up and asked him to give her a blessing. At about 5:30 she sneezed 3 times and a scrapbooking eyelet came shooting out.

Shake Your Booties!

We met Travis and Amy and the kids down in Moab last week. We all had a ton of fun. We went swam at Ken's lake and hiked the waterfall next to it. I'll post more pictures later. We all have kids that love to DANCE.

We went up to South Fork to celebrate Darron's birthday. Darron and Robby took off up the mountain for a couple hours while we celebrated. That is all I want to say about that. grrr.

Ashlee's Swimming Lessons

We put Ash in swimming lessons this year. I think she loved just being able to go swimming every day. We can't wait to get the Payson pool in soon!
